Located on the first basement, "Sugimoto Tokyo Midtown-ten" is the restaurant part of "Sugimoto", a meat specialty store established in 1900. The prices are 3,500yen for "Matsuzaka beef suki nabe" and 1,500 yen for "Japanese black beef suki nabe".

For shabu-shabu, the food is cooked in an earthenware pot called donabe, and for sukiyaki, it's a cast-iron pot. Sukiyaki is cooked more in a skillet style, and the meat is slowly simmered in savory soy, mirin, and sugar broth. The dish has a distinct and robust flavor.
Recommended for: Shabu-Shabu, Sukiyaki, Curry, Stew. Like the name suggests, this cut comes from the Wagyu cow's neck. This is probably the most affordable cut for Wagyu beef. The economical neck cut is suitable for low and slow cooking and the great thing is, it takes 30%-40% the time compared to regular beef.
